Our Overview

For starters, the building that Proof Gastropub is situated in is absolutely gorgeous, lending an inviting atmosphere to the third-floor eatery. Upon walking in, you're greeted and seated by accommodating and friendly staff who present you with a creative menu for eats and drinks.

Whether you choose to indulge in a cocktail or munch away at some grub, there's plenty to choose from. Proof provides a variety of unique takes on traditional pub fare, including some delicious shareables (that is, if you’re willing to share), handcrafted burgers and salads, a shortlist of entrées, and flavorful handhelds. There are also options that can satisfy a vegan palette, given a handful of modifications.

From our experience, Proof Gastropub provides a fun and friendly air that invites you to bring friends and family to have a shared meal over fresh food and great drinks.


Vegan-Friendly

If you happen to be vegan and are visiting the restaurant with friends and other forms of company (self included), then it’s best to make the server aware that you are vegan and would like to avoid things like egg and dairy. The staff at Proof Gastropub are happy to inform you of options in the menu that can be made vegan, as well as suggestions and alternatives to things like sauces.

From what we saw on the menu and have tried, the Beyond Burger is the safest bet as long as you ask for the omission of the cheese and substitute the Proof sauce with a non-egg-based sauce such as barbeque sauce. Most cocktails are safe and good to go as well, save for the Kennewick Man which features house-infused bacon bourbon.

Pork Belly Tacos

Pickled carrots & cucumbers, radish, red cabbage, ginger-soy glaze, and sriracha crema. Served with pico de gallo, chips, and a lime wedge.

Proof Burger

Angus and ribeye blend, onion marmalade, Proof sauce, Applewood smoked bacon, white cheddar, lettuce, and tomato. Served with house fries (pictured) or house salad.

Beyond Burger

Plant based patty from Beyond Meat, gouda cheese, smoky tomato jam, roasted mushrooms, avocado, arugula, and Proof sauce. Served with house fries (pictured) or house salad.

Make it Vegan: ask for the cheese to be removed and substitute Proof sauce with an alternative such as barbeque sauce.

Cavatappi pasta with marinated chicken breast, Applewood smoked bacon, fontina cheese sauce, parmesan reggiano, and herb toasted bread crumbs.

44 North Huckleberry Vodka, fresh squeezed lime juice, ginger syrup, simple syrup, and soda.
